Finding a delicious shrimp sear adds great texture and flavor to any dish, not to mention creating that signature brown crust that adds such depth of flavor in any sauce. To get it just right, use a large skillet with plenty of space, pat dry your shrimp before using, and don't overcrowd your pan!

Use oil with a high smoking point, such as olive or ghee. Butter won't work here because its quick burning time causes shrimp to steam instead of sear.
