Butter blocks are essential in creating laminated doughs (croissants, puff pastry), enriching doughs for brioche, cookies, and improving texture in pie crusts and tarts. In addition, Lactalis Group acquired Fonterra’s for its consumer dairy ingredients business including Anchor and Western Star butter brands that aims to strengthening its presence in butter block supply chains across Oceania, South Asia.
